A Healthy Diet


Apricot Pancakes-
Ingredients-PANCAKES1 cup flourpinch salt1 egg, lightly beaten300ml trim milk4 teaspoons oil or oil spray, to grease
FILLING100g reduced-fat ricotta cheese5 dried apricots, halved

Instructions- Step 1 Place flour and salt in a bowl. Make a well in the centre and carefully stir in egg and milk with a whisk. Mix carefully to make a lump-free batter.
Step 2 Lightly spray a non-stick pan with oil and place pan over a medium heat. Pour in enough batter to cover the base. Cook until batter sets. Flip pancake to cook other side. Repeat process to make 4-6 pancakes.
Step 3 Place a pancake on Mum’s plate. Add 1 tablespoon ricotta to the middle, and 1 dried apricot half. Roll up gently and repeat with other pancakes.
Step 4 Sprinkle with a little sugar and lemon juice to serve.

Fruit Kebab-
Ingredients-2 x 150g pottles vanilla fromage frais2 kiwifruit12 strawberries1 large banana1 apple8-12 grapes75g dark chocolate chips
Instructions-
Step 1 Remove fromage frais from fridge to sit before use. Peel kiwifruit. Cut all fruit in bite-sized chunks.
Step 2 Divide fruit evenly among skewers.
Step 3 Place chocolate chips in a pan and heat until melted. Stir in fromage frais and pour into a dipping bowl. Serve with fruit skewers.


Pizza with spicy lamb and veges-
Ingredients-
1 x pizza dough1 x pizza saucedried oregano1 cup grated edam cheese
For grilled vegetable topping:1 clove garlic2 tablespoons oil1 sprig rosemary or pinch dried rosemary3 courgettes, thinly sliced1 eggplant, thinly sliced1 kumara, thinly sliced1 capsicum, thinly sliced1 cup sliced mushrooms
For spicy lamb:400g lean lamb mince1 onion, chopped2 cloves garlic, crushed1/2 teaspoon salt2 teaspoons cumin1 teaspoon paprikablack pepper, to tastesqueeze lemon juice

Instructions-
Step 1 While dough is rising, prepare topping. Pound garlic, oil and rosemary together, then brush lightly over sliced vegetables. Grill vegetables until tender. Set aside. Heat a baking tray or pizza stone in an oven set to its highest setting.
Step 2 For lamb, heat mince in a non-stick pan. Add onion and garlic. When tender, add remaining ingredients.
Step 3 Spread each pizza base with half the sauce, a sprinkle of oregano, half the vegetables and half the lamb mixture. Top with half the cheese.
Step 4 Slide pizzas, paper and all, onto a hot tray in the oven. Bake for 2 minutes, then slip paper out from underneath. Cook for a few more minutes, then slide cooked pizzas from oven tray.
Step 5 Serve with a mixed salad sprinkled with fresh parsley.
